Super Healthy Strawberries & Cream Chia Pudding

Easy and creamy chia seed pudding recipe WITHOUT the cream or added sugars.
In honour of the Royal wedding I have created this wonderful, very British, dessert recipe for you :).
This magical dish can be eaten for both breakfast and dessert. It is a top contender in the delicious, healthy snacks category. Not only is it really simple to throw together (mix a few ingredients, throw it in the fridge overnight, voila!), it's also an ideal make-ahead option for people who are extremely busy in the morning.
I love to know that I am having a healthy, filling and nutritious start to my day and if I am having a sweet craving in the evening. It is also the perfect replacement for the usual naughty desserts.
Chia seeds are an excellent source of fiber, rich in antioxidants, iron, calcium and Omega-3 fatty acids which help raise HDL cholesterol, the "good" cholesterol that protects against heart attacks and stroke.

Serving: 1 pudding pot
Ingredients
- 1/4 cup of chia seeds
- 1 table spoon (tbs) of agave nector or maple syrup
- 1 teaspoon (tsp) of vanilla extract
- 1 cup of a tin of coconut milk
- Fresh strawberries to decorate in the middle and on top.
- Strawberry chia seed jam
- 2 cups of fresh strawberries
- Half the juice from a lemon
- 1 tbs of Argave nectar
- 2 tbs of white chia seeds
Method
Mix the chia seeds, agave, vanilla and milk in a bowel until it is all combined. Leave it to set in the fridge for 1 hour or overnight. Once ready it have be a gooey thick texture.
Whilst that is setting make your homemade strawberry chia seed jam.
Put the strawberries in a pot and cook on a medium heat for 8-10mins, keeping watch and stirring until it becomes soft and combined. Take this off the heat and mash the strawberries with a masher. Add the lemon juice, agave and chia seeds and mix well. Place the mixture into a container and let it cool in the fridge for at least 10 minutes.
Now to put it all together! Firstly, place a tablespoon of the strawberry chia jam in the bottom of your pot/bowl. Then add a scoop of the chia seed mixture to about 1/3 of the way of the pot. Finally, chop a strawberry so that you can stick four pieces to the sides of the chia pot (should be half way up). Now add the rest of the chia seed pudding to the top. Finally to garnish, add a teaspoon of the strawberry jam and cut a strawberry in half and place like a butterfly on the top.
There you have it - a very English, healthy, strawberries and cream, chia pudding!
